Healthy Holiday Recipe to Support Healthy Skin

Roast Pumpkin, Lentils and Goat’s Cheese

This is a really delicious, healthy dish that can be served as a main course with a sharp green salad or as a generous side that would complement any meat or poultry dish. It is very easy to make and looks beautiful served on a large platter, ready for sharing.
If you don’t have pumpkin on hand, you can use sweet potato as an alternative.

Serves 4

2 small or 1 large pumpkin, de-seeded and cut into large wedges
Olive oil for roasting
Fresh thyme leaves
Salt and pepper

1 bunch of spring onions, thinly sliced
3 large garlic cloves, peeled and crushed with a dash or 2 of ground cumin
1 tbsp smoked paprika
1 tsp chili flakes (more or less, depending on how spicy you like it!)

1 heaped tbsp tomato purée
2 bay leaves
10 oz lentils
4-6 oz soft goat’s cheese
1 bunch fresh coriander, roughly chopped

Preheat the oven to 375

Spread out the pumpkin wedges onto a roasting tin and pour over a generous amount of olive oil, just to coat each piece of pumpkin. Season this mixture generously with salt and pepper and sprinkle with the thyme leaves. Roast in the oven for about 25 minutes, until the pumpkin is tender and beginning to caramelize at the edges.

Meanwhile, heat a splash of olive oil in a frying pan over a moderate heat and cook half the spring onion, together with the garlic, for about 5 minutes, until soft, add the cumin, smoked paprika and chili flakes, the tomato puree and bay leaves and cook for a minute until aromatic. 

In a separate pan, gently boil the lentils in a ½ gallon of water add pepper to taste. 15-20 minutes until the lentils are tender. Discard the bay leaves and check the seasoning.

To assemble: Spread the pumpkin wedges over a pretty platter and top with the spicy lentils and crumble over the goat’s cheese. Sprinkle over the remaining spring onion and chopped coriander.

  1. Wear a wide-brimmed hat.  Protecting your face and neck are essential for glowing skin.  Your facial skin is very sensitive and too much sun exposure will show in all the wrong ways.
  2. Wear a light-weight, long sleeve shirt.  Our poor arms seem to take the brunt of the sun.  Most of us go outside with a hat and something covering our shoulders, but we neglect to protect our arms and hands!  Choose a UV fabric designed for summer wear which will keep you cool while protecting your skin.
  3. Apply sunscreen the right way. Yes, it’s true.  Not all sunscreen is created equal, and often times, even good sunscreen isn’t applied correctly to provide optimal coverage. One shot glass full of spf is what is recommended for your body. Spray on SPF does not saturate the outer part of the skin, be sure to spray and rub in. #ISClinical Solar Eclipse 50 is what I recommend.  Contact me to order this wonderful product! When choosing an SPF only choose these ingredients: Titanium Dioxide and Zinc Oxide for full UVA/UVB protection. We now know that chemical based SPF are damaging our coral reefs, so be mindful and do not choose any chemical based SPF.
  4. Be aware of glare. Wearing a hat won’t protect your skin from glare.  This is especially important when you are on the river or skiing.  If your playing on a reflective surface, pull double duty; wear sunscreen and a hat!
  5. Drink plenty of water.  Being hydrated won’t keep you from getting sunburned, but your skin needs hydration, especially when you are outside working up a sweat in the hot sun!

Attitude is Everything


We hear about this all of our lives but what can assist you in feeling better about body mind and spirit? How to be healthy-looking.

Eat healthy, choose nutritional food that builds your cell health. Good food is regenerating.

Breakfast is one of the most important meals of the day. Be sure to include fiber and protein.

Drink to hydrate.  Infuse your filtered water with herbs, fruits and vegetables. It makes water taste so much better and you will want more of it throughout the day. Don’t reach for sweet drinks or high fat coffees.

Get moving. Walk up that flight of stairs or around the block from your parked car. But better yet, set aside 30 minutes outside by yourself to balance and walk with a purpose. This is lovely way  to regenerate yourself during your lunch break.

Be merry. Remember to have positive self talk. Look in the mirror and say “I love ME” You are an amazing gift to all of those around you. Self love is the first step in learning to be happy and share that happiness with others.

Rest! Your body needs rest to be healthy. If you constantly feel tired, it might be your body telling you to re-charge your batteries. Sleep a minimum of 6 hours and enjoy good nutrition.

Commit to your self. This is the first step in changing your attitude.

Spa Water – Recipes

Enjoy a sip of refreshing spa water and stay hydrated inside and out. Your largest body organ – your skin requires hydration. Infusing your water will add vitamins and minerals to your body and produce brighter, younger-looking skin. Add delicious fruits and vegetables to enjoy a more palatable flavor.  Please only use organic fruits and vegetables.

Orange, Lemon, Parsley, Cucumber is a flavor I enjoy during the winter months. The ingredients are easy to obtain and the citrus/green blend is refreshing.

1 bunch of parsley; 2 cucumbers sliced, 2 lemons sliced, 3 oranges squeezed and retain the peels for the water.  Mix in 1 gallon of purified water, infuse for 2-3 hours. Avoid dehydration and enjoy refreshing spa water. Keep in your refrigerator all week and you will be surprised how much easier it will be to consume enough water.

Refreshing Spa Water – Recipes


5 ASIAN PEARS THINLY SLICED; 1 LEMON (1/2 juiced & 1/2 sliced for water); filtered water and a dash of cinnamon.

Slice the pear and place in a dish. Cut a lemon in half and squeeze half over the pears to keep from browning. Cut the other 1/2 of the lemon into slices. fill your container with filtered water and add the lemon, pear and cinnamon. Refrigerate for a few hours to allow time to infuse the water. Enjoy your refreshing spa water and feel pretty as a pear., #health, #nutrition




8 cups of fresh peach slices; 2 tbsp sugar; 2 tbsp fresh lime juice; 1 1/2 C chilled club soda or filtered water; sprigs of basil

This is a drink that is popular in Mexico and Central America that purees fresh fruit with water. Enjoy this peachy delight that is refreshing on the palette. Puree peaches in a blender or food processor.  Add all ingredients and blend light save basil to float in the water. Cover and refrigerate until well chilled. If using club soda wait until right before serving to add. Otherwise, filtered water will blend and hold.

Delicious Spa Water Recipes

When visiting the spa, one of the most refreshing moments is when you sit down, relax and enjoy a chilled glass of spa water. Every day someone comments on how delicious and refreshing it is. I will be sharing a few recipes of spa water with you to make and enjoy at home. It is always easier to enjoy your daily water intake when it reminds you of your spa visit.


1 quart of filtered drinking water

4 pineapple slices

2 sprigs of mint

Combine ingredients and let it infuse at room temperature for an hour before placing in a

refrigerator. This allows the flavors to meld. I use an infused water container that I found at Target that holds the ice in

the container without diluting the ingredients.

Enjoy and stay hydrated in a refreshing way .  Remember your calming visit to the spa.
